What’s Cooking in Gail’s Kitchen? Something to Savor: Ingenious Bakery Bread! Some days are just made for shortcuts. The fact is, everyone needs a timesaving tip now and then. For starters, buying frozen bread dinner roll dough takes the guesswork out of measuring ingredients, which is why I keep a bag on hand. The other day I made homemade chicken noodle soup and wanted freshly-baked bread instead of saltine crackers. While the aromatic flavors of the soup were blending in the slow-cooker, the bread was rising to perfection. Together they pulled off a meal like a pro.

INGENIOUS BAKERY BREAD

Ingredients:

8 pieces frozen yeast dinner roll dough

1 tablespoon olive oil

1/4 teaspoon dill weed

1 teaspoon Parmesan cheese

Instructions:

Spray a loaf pan with nonstick oil. Place the 8 frozen rolls into the pan in a single layer with edges touching. Cover with plastic wrap that has been sprayed with nonstick oil. Cover entire pan with a tea towel. Place pan in a warm area, free of drafts. Let the dough rise at room temperature until it doubles in size, between 2 and 4 hours. Remove tea towel and plastic wrap. The raised dough will resemble a single loaf. Brush top of dough with olive oil. Sprinkle with dill weed and Parmesan cheese. Bake at 350° for 15-20 minutes. Immediately remove from loaf pan and cool on a wire rack. Brush with melted sea salt butter. Serve warm.

PUMPKIN ROLL

Ingredients for Pumpkin Roll:

3 eggs

2/3 cup pumpkin purée

1 cup sugar

1 teaspoon baking soda

1/2 teaspoon cinnamon

3/4 cup flour

1/3 cup chopped pecans

Ingredients for Velvet Filling:

8 ounces Neufchâtel cheese

3/4 teaspoon vanilla

2 tablespoons butter, softened

1 cup powdered sugar

Instructions:

Preheat oven to 375°. Grease and line a 10″x15″ jelly roll pan with waxed paper. For pumpkin roll combine eggs, pumpkin purée, sugar, baking soda, cinnamon, and flour. Mix until well blended. Pour into jelly roll pan and spread evenly to edges. Sprinkle with chopped pecans. Bake 12-15 minutes. Watch carefully. Remove from oven. Sprinkle powdered sugar on a tea towel, turn cake onto towel, and remove the waxed paper. Starting at one end, roll the cake up, and refrigerate for one hour. Meanwhile, combine Neufchâtel cheese, vanilla, butter, and powdered sugar. Mix together until smooth and velvety. After one hour, unroll cake and spread the filling all the way to the edges. Reroll cake and refrigerate two hours longer. Dust with powdered sugar. Slice and serve.

Nutmeg Cinnamon Popovers

What’s Cooking in Gail’s Kitchen? Be Our Guest: Nutmeg Cinnamon Popovers! Don’t hate me. These bakery-style popovers come with a warning label: Highly Addictive! Perhaps I might include a disclaimer. If you never suffer with sweet tooth cravings or for some unknown reason dislike cinnamon, no worries. For the rest of us, all I can say is “Try to resist licking your fingers!”.

NUTMEG CINNAMON POPOVERS

Ingredients:

6 large eggs

2 cups light cream

1/4 cup unsalted butter, melted

2 teaspoons almond extract

2 teaspoons vanilla extract

1 teaspoon sea salt

3 tablespoons sugar

2 cups flour

Topping:

2 tablespoons butter, melted

1 cup sugar

1 tablespoon ground cinnamon

1/2 teaspoon nutmeg

Instructions:

Preheat oven to 400°. Move the oven rack one setting below the middle row. Grease a 12-count bouchon pan. In a food processor, combine eggs, light cream, butter, almond extract, vanilla extract, sea salt, sugar, and flour. Blend until no lumps remain and batter is light yellow and frothy, approximately one minute. Fill each bouchon cup 2/3 full. Do not overfill. (Refrigerate leftover batter until ready to make the next batch. At that time, use a whisk to vigorously stir the batter.) Place bouchon pan in the oven; bake for 30 minutes or until golden brown. Do not open the oven door during baking or the popovers will deflate. When golden brown, remove from the oven. After 2 minutes in the pan, transfer popovers to a wire rack. Do not allow them to cool in the pan or they may turn soggy. Meanwhile place melted butter in a small bowl. In another bowl, combine sugar, cinnamon, and nutmeg. Mix well. Take a popover and brush it with melted butter to coat. Place the popover in the sugar mixture and roll to coat. Repeat with entire batch of popovers.

Jelly Roll Cake

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Jelly Roll Cake! Sweetness never tasted so good. The best part about this classic cake recipe is the filling can be whatever flavor you wish it to be. I used all-natural Red-Cherry Swiss Preserves for a fruit flavor resulting in a gourmet experience. It created an international glimpse of Switzerland without setting foot on an airplane.

JELLY ROLL CAKE

Ingredients:

3 eggs, room temperature

1 cup sugar

1/3 cup water

1 teaspoon almond extract

3/4 cup flour

1 teaspoon baking powder

1/4 teaspoon salt

1/3 cup almonds, sliced

2/3 cup jelly or jam, any flavor

Powdered sugar

Instructions:

Preheat oven to 375°. Grease and line a 10″x15″ jelly roll pan. Beat eggs until thick and lemon-colored, about 5 minutes. Gradually add sugar, water, and almond extract. Mix thoroughly. Add flour, baking powder, and salt until well blended and no lumps remain. Pour into pan and sprinkle with almonds. Bake 12-15 minutes. Loosen cake from pan and invert onto a tea towel generously sprinkled with powdered sugar. While cake is hot, roll up. Refrigerate one hour. Unroll cake and top with jelly or jam, spreading to edges. Roll up cake again, sprinkle with powdered sugar, cover in plastic wrap and refrigerate two more hours before serving.
