Copycat Jiffy Cornbread

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Copycat Jiffy Cornbread! If you’re wondering why anyone would make a homemade version of a boxed mix, read on. Could it be I’m a control freak? Maybe I want a healthier version? Or is it because my adult son says he recalls fond memories of the blue and yellow box from his childhood? Truth be told, I was too lazy to drive into town to buy the store-bought variety. Good thing I keep a well-stocked pantry.

COPYCAT JIFFY CORNBREAD

Ingredients:

2/3 cup flour

1/2 cup organic cornmeal

1/3 cup sugar

1 tablespoon baking powder

1/2 teaspoon sea salt

2 tablespoons vegetable oil

1 egg

1/3 cup milk

Instructions:

Preheat oven to 400°. Spray a square pan with non-stick oil. Set aside. In a bowl, combine flour, organic cornmeal, sugar, baking powder, and sea salt. Mix well. Whisk in vegetable oil until smooth. Add egg and milk. Stir only until lumps no longer remain. Do not over-beat. Transfer batter to prepared pan. Bake 15-20 minutes, or until a cake tester comes out clean. Serve warm.

    • Oh, you’re sweet. I must say I had a favorite old grist mill I visited in order to buy natural cornmeal. It was located near a stream, so it was quaint and charming. 🍃🌽

  1. For years I had two boxes of Jiffy cornbread mix in my freezer. Threw them out many years ago when they were well past their date. If yours are still in date, please donate to some charity site.

    • Did it smell wonderful? Whenever the Richmond Baking Company was making cookies, the air smelled delightful. I think people couldn’t help but smile all day long. 😋🌿🍪

  2. Besides, what else can you do for fun with 10 inches of snow on the roads in Lexington, where when the first dust of the season comes down, everyone screams, “Oh no! We’re all gonna die!” While in my sis-in-laws place in Edmonton, Alberta, Canada, they get one meter (3 feet) and they say, “Well, at least it’s a weekday and won’t spoil the weekend.”

    • Right? I remember calling my mother after they got 15 inches of snow in southwest Minnesota. Her response was, “We got some snow, but they really got a lot of snow up north!” 🤣 It’s all about perspective. 😜
