What’s Cooking in Gail’s Kitchen? A Cut Above: Herbs Over Burrata! A fresh mozzarella ball and a fresh burrata ball may appear to be the same thing, but actually they are quite different, kind of. Burrata has an outer skin of mozzarella, but the secret lies in the inner pouch filled with fresh cheese curds and cream. This makes it more flavorful, rich-tasting, and buttery. By adding chopped herbs and seasoning, burrata transforms into an elegant appetizer that will impress even the fussiest palate. Donโt believe me? What have you got to lose? Worst case scenario, you get it all to yourself.
HERBS OVER BURRATA
Ingredients:
2 small burrata balls, room temperature
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 tablespoon fresh chives, chopped
1 teaspoon toasted sesame seeds
1/4 teaspoon red pepper flakes
2 tablespoons olive oil
1 teaspoon champagne vinegar
1 package garlic bagel chips
Instructions:
Place the burrata balls in a shallow dish. Combine chopped parsley, chopped basil, chopped chives, sesame seeds, and cayenne pepper in a bowl. Mix well. Add olive oil and champagne vinegar. Stir until thoroughly mixed. Make a cut across the tops of the burrata to release the luscious center inside. Spoon the herb mixture over the top and dredge eat bite onto garlic bagel chips.
Thank you, Gail, for the tempting combination, beautifully presented!

Mmmmmmm. I couldn’t agree more. Mozz is one of my favorites but burrata adds a whole other business to this dish.

Thank you so much for your concern dear sister! I had a silly fall on Monday and dislocated my shoulder! I am mending nicely, but I haven’t been able to type until yesterday, such a pain, literally and figuratively!

Oh nooooo. โค๏ธโ๐ฉน Are you okay? That happened to me a couple yearโs back. Right shoulder. I had to use the voice text to chat. It took me awhile with physical therapy, but I was determined to be able to raise my arm high enough to do my hair! ๐

They said I should wait a couple of weeks to see if I need PT, and right now, each day I get a bit more range, so I am hopeful. But if I need PT, that’s fine too. Left arm, so I can drive!!!!

Very true. Healing has to be first. Just donโt give up. The progress will halt at the level you stop trying. Godโs peace. ๐โจ๐ซ

Thank you! It’s frustrating, but at least there wasn’t a break. I’ll just have to practice patience.

The main thing I found is consistency. I was very diligent in all the circular motions and exercises to โstretchโ the muscles back to normal. When an X-ray technician examined me she said there was no physical evidence of injury.

Then I will follow your good example Gail! Thank you. I think right now my biggest task is sleeping, even a dull ache does tend to keep me from dozing off and I really don’t want to take anything. This too shall pass.

I had to sleep on my back the entire time with a neck pillow plus a small pillow under my arm pit to keep my arm stationary. It took a long time to heal. Iโll be praying for you, Dorothy. ๐๐ป

Thank you! The sleeping is indeed the hardest part. I don’t normally sleep on my back, and I can’t get used to it.
