Substitute ingredients to match your family’s personal cravings. On the go? Pack it in single serving jars for fuss-free options.
VERMICELLI PASTA SALAD
Ingredients:
1 pound vermicelli
1 1/2 tablespoons Accent seasoning
2 tablespoons seasoned salt
1/2 cup lemon juice
1/3 cup vegetable oil
3/4 cup green pepper, chopped
3/4 cup onion, chopped
1 1/2 cups broccoli/carrot/red cabbage slaw
1 cup black olives, sliced
1 tablespoon poppy seeds
1 cup mayonnaise
Instructions:
Cook vermicelli as directed on package. Rinse in cold water. Drain. Place in large bowl. Make a marinade of Accent seasoning, seasoned salt, lemon juice, and vegetable oil. Pour over vermicelli; mix well. Cover and marinate for two days, stirring once or twice. Add green pepper, onion, cut-up broccoli/carrot/cabbage slaw, black olives, poppy seeds, and mayonnaise. Mix well. Marinate overnight. Serve chilled.

That’s great. Me too, I like those “make ahead” dishes, whether it’s a main dish or an appetizer. We made a homemade coleslaw salad and a pasta salad with lemons that lasted us more than a day. I always make salad for both myself and my family, whether it’s lunch or a night snack. 😋🍃

Thanks. Umm. That’s a tough question. No one has asked me that before. I like leafy green salads, fruit salads, vegetable salads, and pasta salads. 🥗🍃😋

I haven’t tried Caesar salad with anchovies, but I tried it with baked chicken strips. That sounds so delicious! I still have the Caesar salad’s sauce.

Honestly, my husband doesn’t like black olives so he is not as fond of it as I am. My kids say it’s similar to a restaurant pasta salad they love. I’ll take that as a compliment. 😜🍃

Two full days of marinating the vermicelli before adding the veggies and mayo must let all those flavors soak in so deeply! Such a great tip to let the pasta absorb the lemon and seasoning first. Looks delicious, Gail! 🥗🍋
